Such sad news to hear of your passing, you were such an inspiration to me, helped me become the person I am today, I will always remember the input you had in my life and support in my career.
One of the most important lectures I had in college, I will always be thankful for everything you did for me, may you rest in peace with the rest of the Culinary Legends.
I truly sorry to the family for their loss.

Dermot was a lovely person to be around he was very dedicated to his students and helped them in any way he could . He also had a life in the hotel and catering business and was very highly regarded by his peers . I will miss Dermot both as a colleague and friend . RIP.

Going to miss you Dairmuid. Many many happy memories with you from our younger days. Great friend and cousin and never forgotten. I don’t think I will be able to listen to Christie Moore for a whole. How many times we drunkly listened to “Ride on”. That song will always remind me of you.
